Up for auction are these 2 BOOKS & A RARE PORK COLLAR STANDARD DISPLAY
General Pork Cutting Instructions #12 & #112
A little history:
The estate that these items were purchased at was from a gentleman who worked for Wilson Meat Co.  From what I was told, he also taugh a class on meat processing.
Both of these books are the same text. I did not find a year on either of them.
They were essentially the bible on company standards for processing pork products. One has the cover page missing and one does have these pages but they are loose. The rest of both books are intact
There are no written notations in either book.
There are no illustrations, they are strickly explanatory
They are approx 128 pages, and measure 7.5" x 4.5"
The binder is leather
I covered the name of the person who was issued this book, but it is not glued or taped. It will be sent uncovered
PORK COLLAR STANDARD
I had to have this interpreted because it is Japanese
It is a standard gage based on the color of the meat
It is in its original box and measures 7" x 1 1/4"
In perfect condition
The box is intact
I have not been able to find this anywhere, so I calling it RARE
